great vegan cookbook and organic cleaning.
Society has long forgotten meat especially beef was a luxury few could afford, and the main source of protein for Europeans was always beans, sometimes salted pork (as pottage stews), rarely rabbit and often cheese (goat, cow and sheep), squab (pigeon). Turkey-size birds like geese, grouse and pheasant were for the Earls, Dukes and Lords (and poaching was a hanging offence), the everyday folk ate small birds, eggs and old ducks/hens (they were kept alive as long as possible for eggs).
Anyway- great recipe book for meat substitutes, some are good, some are not.
